Banana Bread
This banana bread is one of those reliable recipes you can throw together with overripe bananas and pantry staples. The maple syrup adds a gentle sweetness, while cinnamon and nutmeg bring warmth.
Step 1: Preheat and prepare
Preheat the oven to 180°C (350°F). Line or grease a loaf tin.
Step 2: Mix wet ingredients
In a large bowl, mash the bananas. Add the butter, maple syrup, milk, vanilla extract, and apple cider vinegar. Stir well until combined.
Step 3: Add dry ingredients
Add the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg, and salt. Mix until just combined, being careful not to overmix.
Step 4: Fold in add-ins
Gently fold in the chocolate chips and crushed walnuts.
Step 5: Bake
Pour the mixture into the loaf tin and bake for approximately 45 minutes, or until a knife inserted into the centre comes out clean.
Step 6: Cool
Leave the bread in the tin for 15 minutes, then transfer to a wire rack to cool completely.
